DINNER IN A PUMPKIN
A perfect recipe to make on Halloween night to send your kids out
to trick or treat with a full tummy of warm and filling soup.
1 1/2 pounds ground beef
1 pound ground turkey sausage (sweet or spicy)
1 c. diced onion
8 oz. chopped mushrooms
1 large green pepper, minced
salt and pepper to taste
2 cloves minced garlic
1 can cream of celery soup
1 can cream of mushroom soup
1 can chicken stock
1 1/2 cups long grain wild rice mix (par cooked)
1 med - large pumpkin
Cook rice per package direction except only cook for half the time suggested. Set aside.
In a large skillet over medium heat, mix ground beef and turkey sausage. Add garlic, green pepper, onion and mushrooms. Cook and stir until evenly browned. Add salt & pepper.
Preheat oven to 400 degrees. Remove and reserve top of pumpkin. Scoop out seeds and stringy pulp. Lightly oil inside of pumpkin with olive oil.
Mix soups and chicken stock into the beef and sausage mixture. Spoon mixture into the pumpkin, and cover top with foil.
Place pumpkin on a large baking sheet, lined with foil, and bake 1.5-2 hours or until pumpkin is tender. Scoop out portions of filling and parts of the cooked pulp to serve.
