Recipe: Beef & Bean Baked Taquitos

I have committed to making more homemade meals recently and that means re-examining our rotation of recipes and adding new ones. During this quest I made the amazing Baked Creamy Chicken Taquitos by the girls at Our Best Bites (a stellar food blog).  They were so delicious!  And you can make them ahead and freeze them. I decided to use the same principles of making their recipe and create a beef, bean and cheese version.  We had them last night and they were great!

By the way, we served these along side Southwest Quinoa Salad...recipe here.

Here's my recipe.  Hope you like them!


Beef and Bean Baked Taquitos
Recipe by Emilie Ahern
Makes: about 12

1 lb ground beef
½ c. finely chopped yellow onion
2 cloves garlic
1 pkg. taco seasoning (or 1-1/2 T. homemade taco seasoning)
¼ c. fresh cilantro, well chopped
2 c. shredded cheddar cheese (divided in half)
1 c. medium chunky salsa
1 tsp. fresh lime juice
1 can black beans, drained and rinsed
10-12, 8 inch tortillas (flour or corn)
Olive oil
Sea salt

1. Heat oven to 425* F.
2. Line a baking sheet with foil and lightly coat with cooking spray.
3. In a large frying pan brown beef and onions. When well browned add garlic to pan and cook 2 minutes.
4. Add taco seasoning, 1 c. cheese, salsa, beans, and lime juice to pan and stir well. Set aside.
5. Lay out a tortilla.  Place ¼ c of beef mixture inside (leaving 1 inch from edges). Sprinkle with 1-2 Tbsp cheese.
7. Roll up tortillas like a thin roll and place seam down on a baking sheet, not touching one another.  
8. Lightly brush with olive oil and sprinkle lightly with kosher salt.
9. Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown. Remove from oven and let cool slightly before serving.

Serve with guacamole, sour cream, or fresh salsa for dipping.

Freezer Instructions: Prepare the taquitos through rolling them out and placing them on the baking sheet. Place the baking sheet in the freezer and freeze until solid, then transfer to a large freezer bag.

When ready to cook, preheat oven to 425*F and place the taquitos on a lined baking sheet. Bake for 20-25 minutes or until golden brown and crispy.

Baby Naming Madness

This baby-naming bag has been brutal.
Brutal.

I have even gone against my rule
and actually asked for people's opinions.
And people have been super helpful.  Truly.

But I am extremely perplexed by
parents who say
"Wait and see what he/she looks like".
Because babies don't look like anything
except miniature versions of Winston Churchill.
Every single one of them. 


Today we decided on a name for Baby Quatro.
But yeah...you don't get to know until baby time.
Sorry.

These Days

These days are a frenzy of activity. We are up at 7:30 am to get Ella ready for Summer School. Have breakfast, put on clothes, brush hair and teeth and drop her at school.  Some days the only one wearing full clothing during the school drop-off is Ella. Last week we even set a new record for least clothes when Bianca rode to the school, buckled into her car seat, wearing only a diaper.

Then there is always laundry and errands and library visits and Jake and the Neverland Pirates.  Then we pick up Ella and there's lunch and more Disney Channel (hanging head in shame) and a million other things.  OB/GYN appointments and baby naming discussions and dinner planning and lake visiting.


And today I realized it's the end of July.

Summer is passing me by during these flurries of activities and I want to hold on to it for just a bit longer.  But I'm not quite sure how.  This never-ending life busywork needs to somehow be paired down to make room for more imagination and wonder and Summer night star-gazing.

This week I will try to make FUN a bigger priority.

Recipe Share: Ricotta Gnocchi

I am amazed at how many people have never tried Gnocchi (pronounced NYOK-ee).  Gnocchi is a type of pasta traditionally made with potato. Then it's cut into tiny pieces and boiled until it becomes little pillows of softness.  Then you toss it with light sauce and eat like you're in heaven!

Last night I used a recipe from here. This recipe has no potatoes, but has a ricotta base. It was SOOO easy to make (literally 10 minutes) and the kids loved it! It was a good base Gnocchi recipe. I researched some more ricotta gnocchi recipes this morning and I think I would add a few things in the future. Next time I will make this recipe, but add salt, pepper and garlic powder to the dough.

I like my gnocchi sized small and tossed with pesto best, but we had it with homemade marinara last night and it was a hit!  You could also toss it in a frying pan with roasted garlic and butter....oh, sin!

Recipes That Rock: Homemade Magic Shell & Frozen Bananas

The third Sunday in July is National Ice Cream Day and this year we celebrated with Homemade Magic Shell over Sugar-Free vanilla ice cream (our fave brand is Bryers).  It was delicious. And SO easy. My kids were in heaven.  This makes a great gift for Summer friends as well.

There are only two ingredients. Holla!  Here's how you do it.


HOMEMADE MAGIC SHELL
1 c. chocolate chips (semi-sweet or milk chocolate)
2 T. coconut oil (you can substitute vegetable oil if needed)

1. put chocolate chips and coconut oil into a microwave safe bowl.  
2. Microwave on high for 30 second intervals until completely melted, using a whisk to stir after each interval.  This ratio usually takes me exactly 60 seconds in our microwave.
3. Pour over ice cream, wait 30-60 seconds for hardening and eat!

(The left over can be stored for 1 month in a sealed, airtight container at ROOM TEMPERATURE. Not in the fridge, people. )  You could totally put this in a pint canning jar, make a cute tag and give as a gift during the hot summer months. Be sure to include the storage instructions.

Now that you rocked your magic shell get ready to make homemade frozen bananas.


HOMEMADE FROZEN BANANAS
"Remember, there's always money in the banana stand."

3 c. chocolate chips (semi-sweet or milk chocolate)
1/3 c. coconut oil (you can substitute vegetable oil if needed)
4 ripe bananas
wooden popsicle sticks
chopped nuts, sprinkles, crushed candy bar bits, etc (optional)

1. Cut each peeled banana in half.  
2. Stick popsicle sticks into cut edges of bananas
3. Place on cookie sheet lined with wax paper and place in freezer for 2-3 hours until frozen.
4. Make magic shell by microwaving chocolate chips and coconut oil in 30 second intervals until well melted and combined.
5. You may want to pour chocolate into a drinking glass for easier dunking at this point.  Dip each banana into magic shell mixture and lift out. Quickly sprinkle with toppings (if desired).  Wait 30-60 seconds for chocolate to firm.  Eat immediately or wrap each banana in plastic wrap and store in freezer up to 1 month.

Gastric Bypass Q & A

Since I have been open about having Gastric Bypass Surgery in March of 2012 I have had a lot of emails from blog readers wanting to know more info, but remain private. I totally get it.  It's such a personal decision, but you also want to be able to talk it out with someone who has been through it as you consider that decision.  

Here are some of the most frequently asked questions:

Why did you decide to get Weight Loss Surgery?
My father and one of my sisters both had this surgery around 15 years ago. I saw their results, the benefits, the side effects and everything in between.  When they decided to do it I judged them for going so drastic and for risking their lives to be thin.  As the years passed and I saw their lifestyle changes and health benefits I realized I was wrong.  I started thinking about it for myself, but did nothing about it.

When I was engaged to Matt I developed a serious stomach problem as a result of taking a certain medication for migraines.  I needed to take prescription Nexium every single day to cover (not heal) that problem. If I missed a day I threw up blood.  Last year I finally got a scope of my stomach and heard the grim news. There was significant damage.  If they removed the damaged portion I would only have a tiny bit of stomach left...much like having GB surgery.  I was 180 pounds overweight, had sleep apnea and my joints were breaking down.  All of the sudden the GP Surgery was not just making me thin, it was also saving my stomach, curing my apnea, relieving my aching joints and (hopefully) reducing my massive breast size.   But my stupid boobs are still the same cup size (which is an "H" by the way).  Lame.

We prayed long and hard about it.  I decided I would not go through with it unless I got a pretty clear message from God that it was the right thing for me.  We got that message and moved forward.

How long did the pre-surgery process take?
It could have taken just six months, but I stretched it out to a year because I wanted to be very very sure it was right and have all of the information I needed to make an informed decision.

What exactly is Gastric Bypass surgery?
Gastric bypass removes a large portion of your stomach, creating a MUCH smaller one (about the size of a large egg) called a "pouch" to restrict food intake.  It also bypasses much of your intestines which decreases your ability to absorb fat/calories from food.

Why didn't you get the less-invasive Lap Band surgery?
While Lap Band surgery is initially less invasive, it also has a MUCH higher risk for complications as time goes on.  The more years you have a foreign object in your body, the more likely it is to develop a problem.  It is FAR LESS successful as far as losing weight and maintaining weight loss long term.  It also would not have addressed my stomach acid problem.

What are the side effects?
The initial side effects are low energy (for 1-4 weeks post op), hair loss (for 3-6 months post op...but it comes back) and I can no longer take anti-inflammatory medications like Ibuprofen or time-release pain killers.  

Because your food bypasses much of your intestines it decreases your ability to absorb nutrients from food, so I have to take supplements for the rest of my life (currently a multivitamin, calcium and B complex vitamin).

Why didn't you tell people intially?
I had done my research.  I knew this would be an emotional, physical and intellectual roller coaster ride for me. I was trying to prepare myself to live a life where I said goodbye to my oldest and most constant friend: emotional eating.  I knew people would have questions and concerns.  I wanted to be open, but feared that during the months before and directly after the surgery I would be so overwhelmed with the changes and challenges I would face that I had to focus on me and not add additional voices to the mix.  Now that things are more stable, I am in a good groove and have emotionally settled I was ready to speak about it.

What about excess/saggy skin?
I'm not gunna lie. It's brutal. My arms are the worst, but my boobs and stomach are pretty bad as well.  However, to me this is a very minor issue.  I hope to someday correct my upper arms, but even if I never do, it's still okay.  Yes, we all want to feel beautiful, especially when we have lived for years feeling un-beautiful, but my improved health and my life changes far outweigh the inconvenience and (sometimes) embarrasment of having the flabbiest upper-arms ever.

You got pregnant post-op. Is that a problem?
Nope. Most pregnancies after weight-loss surgery are significantly healthier since obesity during pregnancy comes with many potential problems and complications.  I do have to take a lot of additional vitamin supplements to make sure my baby is getting enough nutrition because of the vitamin absorption problem (mentioned above).  Besides that (and not having to take the dreaded glucose test...yay!) everything is normal, if not better.

Do you think people treat you differently now that you're thinner?
Kind of.  I don't feel that people were awful to me before. People would hold doors open for me all the time when I was heavier, but I have noticed that when people hold the door open for me now they look me in the eye.  People also generally look me in the eye much more during conversations and other interactions.  It's weird. But there it is.

Some people say they have lost friends after surgery. Did that happen to you?
No. I only had one friend who expressed that she didn't feel we would be as good a friends after surgery (as mentioned here). But we moved shortly after the surgery to a new area so who knows what would have changed if I had stayed around the same area and seen friendships change after the surgery. In general everyone I know has been so incredibly supportive and even been amazing cheerleaders.  I have known others who had surgery and felt they lost friends because of it.

Is your sex life the same?
Ewww....you're a perve!  No, just kidding. 

This is a valid question and one a lot of people want to know about, including me before surgery.  The answer is it's pretty much the same.   

How much weight did you lose and how quickly?
Everyone is different, but this is how much I lost. 

One month mark: - 45 pounds  
Two month mark: - 65 pounds
Three month mark: - 82 pounds
Three months + two weeks: - 90 pounds (half way to goal)
Seven month mark: -100 pounds
Ten month mark: - 120 pounds

(then I got pregnant)


Are you glad you had the surgery?
Oh, heavens yes!  I was at a weight where I felt like I was literally dying.  I was tired and unhappy and not a good role model for my kids.  I was physically uncomfortable and emotionally embarrassed.  I was not living life.  There are people far heavier than I was who are happy and living well, but I wasn't able to at 330 pounds.  I wanted to be healthy, active and present in my own life, but wasn't.  GP Surgery is not for everyone, but it definitely was for me.  My sleep apnea is gone. My energy is going up. My ups and downs are being dealt with using different methods than eating.

Would you recommend the surgery to others?
I would recommend that people considering it do a LOT of homework. Learn everything you can about the three different weight loss surgeries commonly performed (Gastric Bypass, Gastric Sleeve and Gastric Banding).  I read probably 6-8 different books on the topic before surgery.  The best one I read was Weightloss Surgery for Dummies.  It is pretty thorough and helpful.  I also really liked Obese from the Heart which is not weightloss surgery specific, but is written by a therapist who had a lifelong struggle with her weight and wrote about it. I have heard excellent things about (and plan on reading) You Are WHY You Eat, Stop Eating Your Heart Out, and The Emotional Eater's Repair Manual.

I highly and strongly recommend therapy. You don't get to be 330 pounds without having an unhealthy emotional attachment to food.  And taking away a massive part of your stomach doesn't in any way address the source of the problem.  I had therapy where I not only was able to work through some of my eating issues, but also learned amazing skills for transferring emotional eating cravings.

Friday Fave: Best. Show. Ever.

This week's Friday Fave isn't a shock to anyone. It's my fave show of all time.
PROJECT RUNWAY


After a weak previous two seasons (10 and 11) the premier of season 12 was last night and (wowza!) it's gunna be good.

I have loved (read: been infatuated with) Project Runway since the first season. I never miss it. And you don't have to love fashion to love PR. It's so interesting to see what designers create, especially with weird materials.

Season 2 will always be my favorite. Santino? Nick? The many meltdowns of Andre? Gold.
But the seasons have (mostly) all been good.

SPOILERS: If you haven't watched Project Runway and want to startm from the beginning....STOP READING THIS. Here's my breakdown of the best and worst of the first 11 seasons.

SEASON 01
Watchability: Very watchable. The dynamic of the super-villain (Wendy Pepper) and the contestants is drama gold.  And there were some seriously amazing clothes put out this season.
Who Won: Jay McCarroll
Who SHOULD have won: People were upset that Kara Son didn't win, but based on final collection, Jay was the clear winner. Is final show was amazing.
Best Moment:
Overall Score: A-

SEASON 02
Watchability: Perfection.The perfect mix of wacky personalities, talented designers and drama.
Who Won: Chloe Dao
Who SHOULD have won: Based on the entire season Daniel V should have won, but his final runway was very weak.
Best Moment: The Andre runway meltdown OR the runway walk-off
Overall Score: A+

SEASON 03
Watchability: Lots of good clothes and good drama.
Who Won: Jeffrey Sebelia
Who SHOULD have won: Jeffrey Sebelia's final collection was EPIC. So cool.
Best Moment: There were a lot of good ones this season. A contestant gets kicked off. another makes a Mom cry and there's plenty of fighting.
Overall Score: A-

SEASON 04
Watchability: This is a fairly good season, but the watchability of the seasons starts to wane here.
Who Won: Christian Siriano
Who SHOULD have won: Christian Siriano. Holy AMAZING!  And he spawned a pretty awesome SNL spoof where he is played by Amy Pohler (watch it here).
Best Moment: There wasn't a large standout moment in this season, besides the one-on-one commentary by Christian Siriano, which is priceless.
Overall Score: B-


SEASON 05
Watchability: A small pick-up from last season. Contestants like Kenley and Jerrell bring good drama and antics as well as good design.
Who Won: Leanne Marshall
Who SHOULD have won: Leanne Marshall. Here final collection was amazing. The petals of fabric blew my mind.
Best Moment: Kenley fighting with Tim Gunn.  
Overall Score: B

SEASON 06
Watchability: None. This season is boring and stale.
Who Won: The villain and not-so-talented designer, Irina Shabaveya
Who SHOULD have won: Carol Hannah
Best Moment:  Zzzzzzzz......
Overall Score: D-

SEASON 07
Watchability: Another snoozer.
Who Won: I actually had to look it up. That's how lame this season was.  Seth Aaron.
Who SHOULD have won: Mila
Best Moment:  Zzzzzzzzzzzzz......ZZzzzzzzzzzzzzzzzz......
Overall Score: F


SEASON 08
Watchability: It gets a bit better this season, mostly due to the intense likeability of Mondo and the villain quality of Gretchen.
Who Won: Gretchen. Yes, this is known in PR circles as "Gretchen Gate" because the world cried out in agony when she won.  Not only was she kind of a miserable person, but her clothes sucked.
Who SHOULD have won: Mondo.
Best Moment: Tim Gunn calling Gretchen out for being a bully in front of all of the other designers.  It was awesome.
Overall Score: C+

SEASON 09
Watchability: Gaining momentum again, but still not great.
Who Won: Anya Ayoung-Chee, who couldn't sew and continually draped uncut pieces of fabric over models' heads and called it a caftan.
Who SHOULD have won: Viktor Luna
Crazy Moment: Anya makes a dress in 1 hour and with like $3 of fabric and wins the challenge.  
Overall Score: C+

SEASON 10
Watchability: Getting good momentum. It's starting to feel like the old PR again.
Who Won: Dmitry Sholokhov
Who SHOULD have won: Dmitry. His work was good all season and his final collection was fab.
Overall Score: B

SEASON 11
Watchability: The dreaded TEAMS season.  The team aspect was awful, but the drama was high and it was very watchable.
Who Won: Michelle Lesniak Franklin
Who SHOULD have won: Michelle Lesniak Franklin - she was consistently awesome and I loved her style.
Best Moment: Pretty much every challenge, watching Patricia crash and burn and drag down her team and then watching the judges love her designs.  Crazy.
Overall Score: B-

Season 12: Airing now.

Ella's Portrait & how YOU can get one too!

When I was 10 we had friends down our block named the Whitesides. In their house they had these amazing pencil drawings of each of their 5 kids. I would stare and stare at those drawings, examining the pencil lines, and thinking about how cool it was to have such a personal piece of art of yourself/your child.  

Then, recently, I had an amazing chance to work with my friend, Kim's, daughter.  Clara is an amazing artist and I have been seeing updates of her talent for years via Kim's blog.  Clara is still a teenager and I cannot even believe her artistry.  Sometimes I wonder if this will be my Evangeline in ten years?


Clara has decided that instead of bagging groceries at her local store, she would put her talents to use in the real world. She is spending the summer doing pencil portraits to earn money for college. I signed up immediately and picked a picture of Ella for her to make into an art piece.

Are you dying?  The strands of hair people! The STRANDS OF HAIR!  I also want to shout-out to Clara for removing the awful, attached vest that is on that shirt. I didn't even have to ask. She just knows.

Prices will vary a bit, but most will be in the $150 ballpark. (What price can you put on something like this, right?)  Now to get similar pieces made of our other girls and eventually the baby.  I will totally be as cool as the Whitesides. Finally.

The Great Seuss Collection

Who doesn't love Dr. Seuss?
 
After visiting friends this Summer and seeing their Kids' Book Shelf, I realized our family is sadly lacking in a Dr. Seuss library. So I am setting off on a hunt to have every Dr. Seuss book there is (except the Lady Godivas one with all of the naked chicks....not that one).  I'm not willing to pay over $4 for any one book (the small ones at least) so it's eBay, thrift stores and garage sales for my quest.  Let the hunting begin! 

Theodor Geisel wrote over 60 childrens books during his life. He used the pen name Dr. Seuss for all of the books that he both wrote and illustrated. The pen name Theo LeSieg (his last name spelled backwards) was used for books he wrote but others illustrated.
