Me: How was your day at work today?
Matt: Long. I had to be fake medical patients all day to test the computer coding system.
Me: Like with fake ailments?
Matt: Yeah.
Me: Did they assign you specific ailments? Were you groaning and holding your chest?
Matt: Yeah.
Me: Sounds kinda fun. What ailments did you have?
Matt: Oh, a bunch of different ones. My legs is broken, my stomach hurts, I have been having trouble breastfeeding, I have no.....
Me: Wait...hold on...what? You are having trouble breastfeeding?
Matt: Yeah. I had to have certain ailments to test the system.
Me: So you actually looked a doctor in the eye and said 'I am having trouble breastfeeding'?
Matt: Yes.
Me: (laughing uncontrollably)
Matt: When you have such an intense masculinity, it's the sort of thing you can overlook.

I just fell in love with this man all over again.

"She Lives in Sweden"

This what I say when people ask me about my Mom. So, a lot of you ask why she lives in Sweden. Here's the story...

My parents separated when I was around 18 months old. They divorced and moved far away from each other, my father to Canada and my mother to Utah. Mom single-handedly raised six children. Some of the kids had joint visitation with both of my parents, but of all of her children I was the only child that was always the sole custody of my Mother.

After all of those years being single, my Mother met a man who had previously lived in both Sweden and Utah. But he had recently moved back to Sweden (his home) and after some courtship she traveled to Sweden to visit him for two weeks. And she never returned. LOL! They got married right around Christmas of 2006 and she has been in Sweden and living on a working farm ever since. This has led to us changing our phone service to Vonage ($0.02/minute to Sweden) and having conversations interrupted by such unexpected phrases as...

"I have to go! The cows are out!"
"Can I put down the phone for a minute? I am canning 30 quarts of Lingonberries."
and
"Let me call you back from the phone in the barn."

It has been an interesting transition for everyone involved and I am writing about this today because today I miss my Mom. I am happy that she is happy. And truly, she raised her six children and it was her turn for happiness.

And usually I do well with her being so far away.
But today, I really miss my Mom.

Overcoming Purple Hatred

I realized it's been a while since I posted anything "scrappy" on my blog.

Hello Little Sprouts

This morning Ella checked on our plants and shrieked in delight.
Matt's pot had tiny sprouts of Basil appearing for the first time.
I am very impressed since we only planted the seeds 6 days ago.
Now, we just have to wait to see if the other seeds sprout.

Proof : Not in Utah Anymore

This past week we went out to Popeye's Chicken for dinner with our girls. We sat directly behind a booth housing a woman, her two children and her adult sister. They chatted and ate their dinner and then I overheard this gem come out of the Auntie's mouth towards her 6 year old nephew...

"Tyree. If you kick me under this table one more time, you and I will take it outside and settle this....one on one. And it's ON."

I loved this.
I'm definitely not in Utah anymore.

Britain's Got MORE talent.

I'm just gunna say it.
Some of you will be angry.
Susan Boyle is getting a lot of attention for her recent performance on Britain's Got Talent.
She's got a decent voice, but the majority of her
appeal is her less than ideal appearance and her advanced age.

For this reason her new makeover is a bad idea.
It would have worked from a PR standpoint had it been more
subtle and happened slowly over time, but she loses her under-dog charm
by suddenly sporting this Burberry scarf, freshly dyed hair and plucked brows.



And while I applaud her for not allowing
the aforementioned factors to prevent her from going after her lifelong dream,
she does not hold a candle to this contestant.

Earth Day at the Aherns

This week we had a special Wednesday version of
Family Home Evening.
We planted seeds for Earth Day.
One pot for each member of the family.
Flowers for the girls.
Herbs for Mom and Dad.
And it made me feel like a cool Mom.

Nerd Confession #5...Childhood Crushes

While my peers spent their childhoods pining over David Cassidy or Bo Duke, I had a total crush on Howard Keel. This may be largely due to my family's universal love of Musical Theater. And in the 1950-60's Howard Keel ruled Musical Films. All of which my family owned and obsessed over for the entirety of the 70's and early 80's.

He has a very solid and dreamy man-voice that resonates from his chest and makes him irresistible to 7 year old Emilie.

I probably first fell in love with him as Adam in Seven Brides for Seven Brothers. (pictured left) Which, by the way, is still one of the best movies ever. Then as the slightly more weird Gaylord in Showboat and the dreamy and gruff male lead to Doris Days' Calamity Jane. I saw him on television today and was transported back to my girlhood crush.

I choose to ignore that later in life Howard turned into this very creepy looking old man. And joined the Official Crazy Old-Man Eyebrows club with fellow heart-throb turned eyebrow club founder Gregory Peck.

Who was YOUR childhood crush.
And, more importantly, did he age well?

Spring Break ReCap - Pt. 2

Saturday
(a.k.a. the day I found out Martha's bluffing)

We awoke early and started blowing eggs. Liz and I had great plans to be little Martha Stewart this year, so I packed my MS glitter and my MS glue and we set out to make our own glitter eggs. Not so. I don't know what kind of magic Martha (or her staff) work, but these glitter eggs were not happening. They were messy, chunky and bald in patches.

We gave up on being Martha and instead played in the yard with the kids and busted out some bubbles. I tried to catch some good pictures of Max, who is not prone to smiling in pictures. I think I succeeded.


In the afternoon we visited downtown Pittsburgh and I forced the family to take a ride in this little train. Fun right? Wrong. It just takes you in a loop around the mall. We were squished in like sardines and I'm pretty sure that everyone involved secretly hates me now.


We rode the Monongahela Incline to get a bird's eye view of Pittsburgh.


At the top the kids played while the adults froze and looked at the Pittsburgh skyline.



And look at this handsome devil who went with me to Pittsburgh.



Easter Sunday
We got up and ready for church. I tried, in vain, to get a really decent shot of the two girls in their Easter dresses. My inability to get a great shot was mostly due to Evangeline's shoes. We couldn't find her matching sandals, so we had to take her pink sparkle shoes, which she refused to take her eyes off of long enough to snap a photo of her face.



After church we had a low-key Easter egg hunt with the kids. We hung their baskets from the trees in a nearby park and hid the eggs all around the playground.They had a great time, despite their faces in this photo









We came home and had a nice Easter Dinner of ham, funeral potatoes, veggies and for dessert I offered up two pies. A Banana Cream pie and this Triple Berry Pie. We had to leave before the berry pie was cooled so we put half of it on a paper plate and Matt and I demolished it in the car on the way home. So good, people...so good. Something really DOES taste as good as being thin feels.

Spring Break ReCap - Pt. 1

I just remembered I never offered up my Spring Break wrap up.
Shame on me.
I am sure you were all dying inside waiting.
Well, die no more.
ThursdayWe left our house at around 5:00pm...3 hours later than planned. Why does that always happen with road trips? Matt drove the whole way (what a Champ!) and I took pictures out the window.


We arrived around 11 pm and Ella could not go to bed until we read a book. That's my girl!



Friday
We started off the morning with a bang! Ella was jumping on a bed that was set up for us in the basement. She fell off and whacked her eye on a tire jack. Black eye ensues. Mother consoles daughter while inwardly imagining black eye in Easter photos and cringing.



I dragged the entire family to a place in Pittsburgh that sells this amazing Root Beer that I last drank 10 years ago in Harlan, Iowa. Well, I must have made that root beer a myth in my mind because it was pretty underwhelming.



After naps we took the kids to this AMAZING playground. Is this not the coolest ever?!!





When we got home and finished naps we opened Easter presents from my SIL, Michelle. She made the girls these amazing tutus. They were a hit!



After the kids were in bed the adults broke into the Easter candy. I demonstrated my amazing talent of creating blue lipstick with Cadberry candy eggs while wearing one of the tutus on my head (my Mother-In-Law's idea, but I was all over it!). I'm a sexy beast...I know.

Recipe: French Onion Soup

Yesterday my family had a sick-day.
We all felt under the weather for different reasons.
What could heal us? French Onion Soup.
I have always wanted to make home-made F.O.S. and yesterday was my day.
I wondered if my kiddos would eat it, even though they are great eaters.
They loved it!
Try it tonight and freeze some for later.

This recipe serves 4-6....so double it!



FRENCH ONION SOUP
Recipe by | Emilie Ahern
Serves: 4-6

3 T. unsalted butter
3 large onions, sliced 1/4" thick
2 cloves (or 2 tsp.) minced garlic
2 T. all purpose flour
1 qt. beef stock
1 (14.5 oz) can chicken stock
2 bay leaves
2 springs fresh thyme (or 1 tsp. dried)
1 tsp. salt
pepper to taste

1 baguette
1&1/2 c. grated Gruyere OR Swiss cheese




To Prepare:
1. Place butter in medium/large pot and melt over medium heat.
2. Add sliced onions and cook over medium-med/low heat for 30-45 minutes until lightly caramelized.





3. Add garlic and flour to pot and cook for 3 minutes.
4. Add broth, bay leaves, thyme and salt.
5. Bring to a boil and boil for 2 minutes.
6. Reduce heat and simmer at least 20-40 minutes. The longer you simmer the better the flavor will become. Remove bay leaves.

7. Slice baguette and toast under broiler until lightly golden. Set aside.  

Note: You can also chop the bread into 1/2 cubes and toast it lightly under a broiler on a sheet pan for easier eating.



To Serve:
- Ladle soup into oven safe bowls.
- Top with 2-3 slices of toasted baguette and top each bowl with 1/4 c. grated cheese.
- Place under broiler until top is bubbly and brown.






To Freeze:
1. Ladle soup into oven safe bowl. Cool completely in refrigerator.
2. Cover with plastic wrap and freeze for up to 3 months.
3. In a separate baggie freeze 2 baguette slices and grated cheese for each bowl.

To Prepare from frozen:
1. Allow to thaw in refrigerator.
2. Microwave on half power, stirring every 2 minutes until heated through.
3. Top with bread slice and grated cheese.
4. Broil until top is golden brown and bubbly.
